Pressure Cooker Veggie Frittata

Lean and Green Veggie Frittata Pressure Cooker

Serves 2
1 leaner 3 green 1.5 condiments
4 eggs plus 8 egg whites or 2 cups liquid egg whites
1 cup red bell pepper chopped
1/2 cup green onions
1 cup chopped spinach
1/2 cup chopped mushrooms
1/2 cup zucchini
1 tsp garlic
1/4 tsp salt
1/2 tsp pepper
Put eggs in a bowl and beat for 1 min.  Add in all other ingredients and mix well. Add to round baking dish.   Pour 1 cup of water into pressure cooker and put trivet in bottom.  Add dish.  Cook on high pressure for 20 minutes and quick release.  Then quick release.  Carefully remove dish.  Can be served warm or cold.
