Chicken Cacciatore
Serves 4
4 medium chicken breasts
1 tsp salt
1/4 tsp pepper
1 cup chicken broth
1 tsp oil
2 cloves garlic, minced
1 medium onion, diced
1 large red bell pepper, diced
1 28oz can diced tomatoes, drained
1 tbs fresh rosemary chopped
1 tbs fresh thyme chopped
1 med bay leaf
1tbs vegtable soup seasoning
Place chicken broth in bottom of the pressure cooker. Season chicken breasts with salt and pepper. Cook on poultry setting for 6-8 minutes and quick release.
Take out chicken and rinse pressure cooker pot. Chop chicken into bite size pieces.
Place 1 tsp oil in pressure cooker and turn on to sear. Add diced bell pepper and onion , and cook for 3-5 minutes until onions start to sweat. Add chopped garlic cook 1 min. Turn off sear. Add drained tomatoes, thyme, rosemary, bay leaf and vegetable seasoning. Return chopped chicken to pot. Set pot for 4 minutes at high pressure. After do a quick release.
Serve over pasta or rice.
