Pork Grillades
Recipes:
1.5-2 lbs veal, beef or pork rounds
1/3 cup flour
1/2 TBL cajun or creole seasoning (found on Amazon HERE)
High heat oil, enough to coat the bottom of pot or large skillet
1 onion, diced (chopped with Food Chopper)
1 bell pepper, diced (chopped with Food Chopper)
2 stalks of celery, diced (chopped with Food Chopper)
6-8 toes of garlic, minced
1 TBL flour
1 can diced tomatoes
2 cups beef broth
2 Bay leaves
1 TBL worcestershire sauce (found on Amazon HERE)
1 tsp vinegar
1 tsp italian seasoning or 1/2 TBL each of rosemary, thyme and oregano
hot sauce to taste
Directions:
Combine flour with cajun or creole seasoning in a bowl, add pork and coat evenly. Heat oil over medium.high heat. Add pork and brown on both sides, remove and set aside. Add onions, bell peppers and celery, add 3 pinches of salt and 1 tsp, more or less, of cajun or creole seasoning. Cook until soft and browned, add tomatoes, italian seasoning/fresh herbs and garlic and cook 1 minute. Sprinkle 1 TBL of the flour on the veggies, mix in. Gradually stir in the beef broth, add bay leaves, Worcestershire, vinegar and tabasco. Put pork back in pot, simmer.
