Italian Ragu

Lean and Green Italian Ragu

Serves 8
1 green and 1 condiment
28oz Can San Marzano Tomatoes (pureed in blender)
14.5 oz can diced tomatoes
1/2 cup celery chopped
4 Tbsp chopped onion
2 tsp garlic
1 cup chicken broth (0 carb)
1 chicken bullion cube (dissolve in a little water- 30 sec in microwave to dissolve)
Sprig of Rosemary and Thyme
(This will be bound and then removed, so not considered in calulation)
1 spitz of non-stick spray to pot
Add chopped celery and onion
Cook till softened
Add garlic cook till fragrant
Add chicken broth and mix
Add pureed tomatoes and diced tomatoes
Add dissolved bullion cube.  Mix well
Bundle a sprig of rosemary and thyme together, then add to sauce.
Bring to a boil, then simmer for at least 30 minutes.
Remove bundle and enjoy!!
