Lean and Green Creamy Tuscan Chicken w/Cauli Mash
Serves 2
1 leaner, 1 healthy fat, 3 condiments, 3 greens
14oz skinless boneless chicken breast
2 cups cauliflower florets
1/2 cup unsweetened coconut milk
1 tsp dried basil
1/2 tsp dried oregano
2 tsp garlic
1/4 tsp pepper
2 cups baby spinach
1 tbsp butter
Pour coconut milk into bottom of the quick cooker, add cauliflower florets. Place chicken breast directly on the cauliflower. Cook on high pressure for 15 minutes then quick release.
Remove chicken and let rest.
Use oven mitts to drain cauliflower (reserve liquid for sauce).
Place cauliflower in a separate bowl and set aside.
Add back in liquid and add spices and garlic, let simmer(saute setting) about 5 minutes or until sauce reduces to 1/3.
Stir in spinach and cook till it wilts, about 1 minutes. Turn off cooker and remove insert to cool (it will thicken)
Use a fork to mash cauliflower and add butter
Serve chicken over cauliflower mash and sauce over the top.
