Summer Minestrone Soup

Vegetable Minestrone Soup Quick Cooker
2 tbsp olive oil
2 celery stalks, diced
1 large carrot, diced
2 cups leeks, sliced thinly (about 2)
3 cloves garlic minced
2tbsp tomato paste
1tsp dried basil
1tsp dried oregano
1 bay leaf
1 cup chopped yellow squash
1 cup chopped zucchini
1 cup chopped fresh green beans
1 cup chopped red bell pepper
1 cup dilitini pasta (salad macaroni)
4 cups broth (vegetable or chicken)
1 can white or cannellini beans
To serve:
Fresh parmesan cheese (grated)
Saute celery, carrots and leeks for about 5 minutes to soften
Add tomato paste mix in
Add garlic, oregeno, and garlic
Salt and pepper
Add tomatoes, all veggies, broth, bay leaf and pasta
Cancel Saute
Cook on Manual high pressure 6 min
Natural release 2 min, then quick release
Open carefully
Stir in beans
Check salt and pepper and adjust if needed
When serving top with pesto and freshly grated parmesan cheese
Serves 4-6
