Danielle makes her version of Ratatouille, in a pressure cooker.
1tbsp olive oil
1 medium onion, sliced
2 cloves garlic
2 small or 1 medium eggplant peeled and sliced thin
2 med zucchini
1 12oz jar roasted red bell peppers, drained and sliced
1 28oz can diced tomatoes
1 tbsp vegeta
Fresh thyme and rosemary (bundled)
1 bag frozen turkey meatballs
Select SAUTE setting and add oil Add eggplant and zucchini and saute for about 3 minutes. Add onions and garlic and saute another 3 minutes. Add bell peppers, tomatoes, vegeta, meatballs and fresh herb bundle. Stir to incorporate seasoning. Close and lock lid. Press CANCEL to stop SAUTE function. Select MANUAL setting with a cooking time of 4 minutes on HIGH pressure. When time beeps, use. Quick Release. Carefully unlock lid.
