Lean and Green Pressure Cooker Vegetable Soup with Turkey Meatballs

Serves 2
1.5 HF, 3 greens, 4 condiments
1 tsp olive oil
1 cup chopped leaks
1/2 cup chopped zucchini
1/2 cup chopped yellow squash
1/2 cup chopped red bell pepper
1/2 cup diced tomatoes
1 tsp garlic
1 chicken bullion cube(broken up or softened)
1 bay leaf
2 cups chicken broth
2 cups water
2 tsp dried basil
1 tsp dried oregano
1 tsp tomato paste
2 tbsp pesto sauce
Turkey Meatballs (see recipe)
Turn cooker on saute and add oil and leeks. Saute till softened. Add garlic and cook till fragrant. Cancel Saute.  Add zucchini,  squash, bell pepper, tomatoes,  chicken broth and water.  Stir until combined.   Add bullion cube, tomato paste, bay leaf basil and oregano.  Stir well. Add turkey meatballs (see recipe) Cook on Manual High pressure for 6 minutes. Let sit for 2 minutes then quick release.
Serve warm with 1 tbsp pesto sauce on top.
