Lean and Green Western Eggs
1 leaner, 1 HF, 3 greens, 2.5 Condiments
2 cups liquid egg whites
6 oz cooked chicken breast (diced bite size)
1/2 cup fresh parsley chopped
1 cup chopped colored bell peppers
1/2 cup green onions
1 tsp chopped garlic
1/2 tsp no salt seasoning
2 tbsp chopped onions
1 cup chopped mushrooms
2 tbsp low fat shredded mozzarella
1 cup baby spinach
Saute bell peppers and mushrooms till soft. Add onions. garlic and chicken -cook 1-2 min
Remove from heat
In a large bowl combine egg whites, seasoning and 1/2 of green onions. Whisk together.
In a large pan with non stick spray.
Add egg mixture and vegtable mixture to pan. Cook until eggs are done. Top with cheese and remaining onions. Serve over baby spinach.
