Lean and Green Pressure Cooker Chicken Stroganoff
Serves 2
1 leaner, 1 HF, 3 Greens, 4 condiments
12 oz chicken breast (cut into bite size pieces)
2 tsp olive oil
1 cup thinly sliced leeks
1 cup chopped or sliced mushrooms
2 tsp fresh chopped thyme
1/4 cup chicken broth
1 tsp Worcester sauce
1 tsp Dijon mustard
2 tbsp almond flour
1/2 tsp paprika
1/4 cup fresh parsley chopped
4 tbsp Greek yogurt
1 cup zucchini noodles
Turn pot on saute and adjust to normal. Add oil to pot and add chicken cook till browned about 10 minutes. Add leeks and mushrooms cook until leeks soften about 3 minutes. Stir in thyme, Worcester sauce, salt, and pepper. Press cancel san secure lid. Select manual high pressure for 5 minutes. Quick release and press cancel. In a small bowl combine mustard, yogurt and flour. Add to the pot, press saute and adjust to normal. Cook and stir for 2 minutes or until slightly thickened. Spray a pan and saute noodles until slightly softened.
Serve together.
